Lemon Pasta — Serves 4
Total time: 25 minutes

Ingredients
- 1 lb (450g) spaghetti
- 2 lemons (zest of both, juice of 1)
- 1/2 cup heavy cream
- 1/2 cup grated parmesan
- 4 tbsp unsalted butter
- 1 clove garlic, minced
- salt, freshly cracked black pepper
- fresh parsley, chopped (optional)

Steps
1. Bring a large pot of generously salted water to a boil. Add pasta and
   cook to al dente (typically 1 minute less than the package time).
2. Meanwhile, melt the butter in a wide pan over medium heat. Add the garlic
   and lemon zest; cook 30 seconds until fragrant. Add lemon juice, then
   cream. Simmer until reduced by about a third.
3. Reserve 1 cup of pasta water before draining.
4. Toss the drained pasta into the sauce. Add parmesan and a splash of pasta
   water; toss to coat. Add more pasta water as needed for a silky texture.
5. Season with salt and black pepper. Top with parsley and extra zest.
